Tourlou is a mixed vegetables dish, an easy, healthy and cheap recipe to make that includes whatever you've got in the fridge. My grandmother who was from Pontus, used to make it often when I was little and to this day, I follow her recipe word for word!

What we need:

  • 2-3 medium-sized potatoes
  • 2-3 medium-sized zucchinis
  • 1 eggplant
  • 1-2 carrots
  • 1 sweet red pepper
  • 1 can (1.10 lbs ) diced tomatoes
  • 1 tsp tomato paste
  • 1 level tsp sugar
  • 1 medium-sized onion, finely chopped
  • 1-2 cloves of garlic (optionally)
  • 4-5 tbsp extra virgin olive oil
  • finely chopped parsley
  • salt
  • pepper
  • thyme
  • 1 tsp sweet paprika
  • 1 vegetable stock cube

How to do it:

Βήμα 1
1) Cut the eggplant into cubes and let them sit for about an hour in salted water to lose their bitter taste. Then, dry them well.

2) Cut the potatoes into cubes, the carrots into round slices, julliene the peppers and cut the zucchinis into slices.

3) Finely chop the onion and the garlic and sauté in a deep pot for a couple of minutes until they get golden.

4) Gradually add the vegetables and all the spices and finally the tomato with the tomato paste and the sugar. Mix all the ingredients well.

5) Add water and boil for about 40 minutes over moderate heat until all the water is absorbed and the vegetables cook.

6) Just before the 10 final minutes of cooking time add the vegetable stock cube for extra taste.

Additional tips

You can serve it with feta cheese or olives and fresh bread!

If you like, when you sauté the vegetables you can add a little smooth mustard. It adds an amazing flavor.
