Pork with kefalotyri and peppers

A super easy recipe to make, with no trouble at all, ideal for a festive meal!!

What we need:

  • 2.20 lbs pork cut into small pieces or portions
  • 8.82 oz grated kefalotyri (a Greek hard salty yellow cheese)
  • 3-4 peppers, green
  • 2-3 red or yellow peppers
  • 1 can diced tomatoes
  • salt, pepper

How to do it:

1) Cut the meat into portions or small pieces and season with salt and pepper.

2) Cut the peppers into rings.

3) Use a baking tray with a lid or casserole dish and spread a layer of grated kefalotyri, a layer of peppers and the meat on top. Repeat with kefalotyri, then peppers.

4) Spread the diced tomatoes on top, cover with the lid and bake covered at 200°C for about 2 hours.

5) You don't need to add any extra water because the pork lets out its liquids.

Additional tips

You can also make this recipe using beef or chicken and accompany with fried potatoes or rice.

Remove the lid a short while before you turn the heat off, so that all the liquids evaporate and it is left with just its sauce.

I first tried it in Thessaloniki from an experienced housewife and since then I have been making it on numerous occasions, it always makes me proud.
