A great addition to parties, a great accompaniment for ouzo! Tasty and healhty.

Muffins with tomato

What we need:

  • 3 firm medium-sized tomatoes, diced
  • 1 spring onion very finely chopped
  • 1 dry onion, grated
  • 3.53 oz grated feta cheese
  • 2 tbsp strained yogurt
  • 2 eggs
  • 1 cup self rising flour
  • parsley, spearmint, salt, pepper

How to do it:

  1. Mix all the ingredients well together into a thick batter.
  2. Brush your muffin tin with oil and sprinkle with breadcrumbs.
  3. Pour 2-3 tbsp of the batter and bake at 180°C for about 60 minutes until they are golden brown.

Additional tips

You need to brush the muffin tin very well with oil.

Make sure that they are cooked all the way through.
