Kalamarakia (Calamari) that are a dream!

Kalamarakia giouvetsi

What we need:

  • 3.3 lbs calamari
  • 1.1 lbs orzo
  • 2 cups oil
  • 2 onions finely chopped
  • 2 cups tomato sauce or tomato purée or fresh tomatoes
  • 1 1/2 cup white wine
  • salt
  • pepper
  • 1 cinnamon stick
  • two or three grains allspice

How to do it:

  1. Clean and wash the calamari.
  2. Heat the oil and add the onion to sauté for a while and then add the calamari which you have cut into pieces. 
  3. Sauté well.
  4. Then add the wine and let everything boil for 5' so that the alcohol evaporates.
  5. Add the tomato, salt, pepper, allspice, cinnamon and let it boil.
  6. When it is almost done, place in a baking tray and add hot water.
  7. When it boils add the orzo and stir until it is done.

Additional tips

When you remove the food from the oven it should be relatively juicy.
