How to do it:

  1. Soak the beans overnight (if you want you can add a little baking soda).
  2. Boil them on the next day until tender, discarding the first batch of water that you boil them in.
  3. Once they are tender add the finely chopped onion, garlic and peppers, the carrot slices, the bay leaves and allow them to boil for a while.
  4. Then add the tomato (both the grated and the tomato paste), allow it to boil for a couple of minutes and finally add the olive oil, the dill, the parsley and the spices.
  5. Empty in a pyrex baking tray and bake at 160°C for about 1 to 1 1/2 hour, until the beans have absorbed most of the liquids.

Good luck!

Additional tips

During cooking make sure that you add water gradually and in small quantities.

When you place the giant beans in the baking tray they should have quite a bit of liquid, like a soup so that by the end of cooking they are completely mellow and juicy.

While baking you should stir from time to time so that the beans absorb the liquids better.

This recipe is delicious and also light.
