Preserve made of black sour cherries, red cherries or even grapes.

What we need:

  • 4.41 lbs black sour cherries
  • 1/2 cup of water
  • 4.41 lbs sugar
  • 2 tbsp lemon juice or citric acid

How to do it:

  1. Wash and drain the cherries well.  Place them on absorbent kitchen paper and let dry.  Stone the fruit over the preserving pan, so no juice is wasted.  The stoning should be done with a cherry stoner, if available.  Reserve the kernels in a bowl of water.
  2. Having stoned all the cherries, cover them with the sugar and add the water in which the kernels were soaking.  Allow to stand overnight.
  3. Bring the cherries to a boil and cook until the juices thicken, removing with a slotted spoon any scum that appears.  Just before end of cooking time, add the lemon juice or citric acid.
  4. Remove the pan from the heat, and allow to cool. While they are cooling, grasp and shake and twirl the pan  several times, to stir the preserves. This will allow the fruit to soak up more liquid and to swell up more.

Additional tips

Red cherries may be prepared in the same manner, but using less sugar.  For 2kg cherries add 1,5kg sugar, and no water.

The kernels should be discarded.

If you desire the cherries to have a crunchier texture, allow them to soak for 1 hour in water in which slaked lime has been dissolved.  You may use vanilla extract to flavour.  Move the pan around several times while the preserves are cooling down, so as to allow the cherries to reach their maximum size.

Grape preserves may be prepared in the same manner.  For 2 kg grapes add 1 kg sugar and flavour with vanilla extract.
