Description

Get some nice ripe black cherries and make this jam. The only thing that takes some time is pitting them! 

Cherry jam

What we need:

  • 2.20 lbs black cherries 
  • 2.20 lbs jam sugar 
  • Zest and juice of 2 oranges

How to do it:

1) Wash the cherries, pit them and cut them in half.

2) Place all the ingredients in a large pot, mix and cook over very low heat until the sugar dissolves.

3) Turn up the heat a little and let everything simmer until the cherries are tender.

4) Turn up the heat and let everything boil for about an additional 4' (jam sugar needs to boil a little while). Remove from heat and try the cold plate test*.

5) Let it cool and then store it in hot sterilized jars.

Additional tips

You can find jam sugar in large supermarkets. 

*The cold plate test:
Place two small plates in the freezer. Place 1 tsp of jam on one of them. Put it back in the freezer for one minute. Take it out and try to make a line in the jam with your finger. If you can form the line without the jam trying to get back together, then it is ready! 
(The second plate is in case the first one doesn't work out. Then carry on with the second after a little while). 

The jam gets quite a bit of flavor from the oranges. Next time I will try it using less juice. 

If you want your jam to be smooth, when the cherries are tender, blend them with a hand blender.
